Flapjack
Ingredients
1 cup (2 sticks) butter – salted or unsalted, it doesn’t matter
1/2 teaspoon salt
1 tablespoon vanilla extract
3/4 cup packed brown sugar
15-20 tablespoons golden syrup (about half a small tin)
3 ˝ to 4 cups quick cook oats
1 cup raisins or sultanas
1 cup almonds or other nuts (optional – not traditional but nice)
Directions
1. Preheat the oven to 350 degrees F (175 degrees C).
2. In a saucepan over low heat, combine the butter, salt, vanilla extract, brown sugar and golden syrup. Cook, stirring occasionally, until butter and sugar have melted – make sure not grainy and fully melted. Stir in the oats and raisins until coated. Pour into a 7 or 8 inch baking pan (something with deep-ish sides). The mixture should be about 1 inch thick. Pat down.
3. Bake for approx 20 minutes in the preheated oven, or until the top is golden. DO NOT OVER COOK or it will be crumbly instead of moist and chewy so keep an eye on it after about 17 mins.
4. Leave to cool almost completely then cut into squares while still in the tin
5. Then let cool totally before removing from the tin. If you don’t, it will crumble, I promise!
6. Make cup of tea and enjoy the two together!
